Ketogenic Pizza

Pizza.  One of the most delicious foods known to man.  Is there any food out there that could be less ketogenic?  One of my personal Achilles’ Heel foods.  Before I went paleo, I can safely say that I would average eating pizza about 3 times a week.  So, when I did go paleo, it was one of the hardest foods for me to wave goodbye to.  But, if it meant becoming healthier and possibly alleviating some if not all symptoms of my epilepsy, I was willing to leave it behind, however delicious it may be.  A few months ago, however, I started thinking of a way to have some semblance of pizza again.  Thus, the bacon crust pizza.  I also managed to find a cheese that not only was 80% fat, but also contained no lactose.



Preheat oven to 425 degrees.  While oven is preheating, slice baby bella mushrooms and set aside.  Weave bacon into a lattice and place on a rack in a baking sheet.  Bake bacon lattice in oven for 20-25 minutes.  The cooking time will vary depending on your oven and how quickly your bacon tends to cook.  You want to bake long enough to cook until slightly crisp but not all the way through.  Remove and let cool slightly.  Add sauce, cheese, pepperoni, mushrooms, basil, and anything else you like on pizza.  Place back in oven and broil for an additional 5 minutes or until cheese is brown and bubbly.  Enjoy…like that’s somehow not a possibilty!

        Okay – so I want to use this recipe for a brunch party for my family. They are not paleo (really far from it actually) and I want it to be really good. Any ideas on how to make a nice/fancy/elegant breakfast pizza with this wonderful crust? Just not sure of what ingredients would go good (maybe smoked salmon on top, but with what else?)…and if eggs…how to prepare?

      • Hi Jason,
        My friend Tim makes a great breakfast rendition of this pizza. He uses an egg scramble with a salsa for the sauce to put on top of the bacon crust. Since it’s a scramble, there are countless variations that you can do with it. Just add the scramble to the cooked crust and broil for a few extra minutes to get it nice and browned. Good luck!

    My family had this for dinner tonight and it was ingeniously delicious!!! I couldn’t find no-nitrite pepperoni, so I used uncured no-nitrite salami instead (cut up into little pieces) along with sausage, black olives, and mushrooms. So tasty! I cooked two pizzas one on the rack in the pan and the other just right on the pan (that was covered in foil). I found that when the pizza was cooked right on the pan the bacon was more crunchy and well done. The bacon crust of the other pizza that was cooked on the rack was a little more raw. Other than that it was excellent! I’m so happy to be able to enjoy good pizza again. Thank you!

    • I’m so glad you liked it Madelyn. Thanks for the great feedback. I’ll have to try it without the rack. I just find that it allows air to circulate for a more even heating. It does add some time to the baking process though. Thanks again!

  15. cauliflower pizza crusts are pretty decent too, and a bit cheaper than a bacon weave if you can’t afford pastured bacon.

    • True but if you’re trying to stay as low carb as possible…even cauliflower might push someone out of ketosis. That said, I’ll have to give it a try and see how it comes out. Do you keep it together using eggs?

    Looks great! I’ve also made pizza, but we used ground up chicken breasts mixed with egg and cheese for the crust. It was amazing!

      Oh, no! A vegan troll! Lol, do some research into the nutritional profile of Paleo eaters vs vegans minus their supplements, then ley’s talk about what’s healthier.

      Done. Americans live on a paleo friendly diet and shun nearly all veggies and fruits. And lo, record rates of obesity, heart disease, and cancer. Not to mention the beyond abusive practices towards animals and vast environmental degredation. Congratulations

        Hmmmm, next time you want to make a comment about how Paleo/Primals eat, how about you do a little research first. Paleo/Primal is hunter-gatherer, which is majority fruit/veg. There isn’t a Paleo/Primal eater that eschews fruit/veg. The only things that Paleo/Primal eaters shun are plants like grains, legumes, and sugar cane because they destroy the body. The Standard American Diet is the farthest thing from Paleo/Primal there is. Paleo/Primal is about clean unprocessed foods.

        Factory farming is unsustainable, cruel, and unhealthy. We can agree there. However, Paleo/Primal eaters do their best to go out of their way to consume animals that were raised in a minimal stress environment and that we’re fed only foods they we meant to eat. It makes the meat healthier.

        Sorry, pal, your claim that Paleo/Primal eaters have higher cholesterol is just flat out untrue. Hunter-gatherer diets are shown to help reverse obesity and improve cholesterol, and due to the low insulinogenic foods consumed diabetics are being referred more and more.

        Now, why don’t try again with facts, and leave the Strawman at home.

    OMG!!! You are a Genius! I made this tonight and my family – who are non – really liked it!
    My husband is on the phone now telling a friend what his wife made for dinner!

    I used your rack idea and agree with the comment above about not as crispy as it would have been just in the like I usually cook bacon…however, my husband suggested that I try the “convection” setting on the oven – then air will circulate and perhaps crisp it up that way.

    In any event, I still say – You are a GENIUS…keep those ideas coming!

    Ermahgerd! I tried this tonight, and let me just say… THANK YOU! This is the best idea! It is like all the toppings of a pizza without all that pesky and awful dough (why didn’t I think of this?)! I would have this daily!
