Quick Stirfry

This is a quick and easy recipe that will make enough servings to last 3-4 meals.


1 large red bell pepper sliced
2 zucchini thinly sliced
1/2 lb ground meat (I used chorizo that I got from the farmers market for this)
3-4 eggs (optional)
1 avocado cubed

In a large skillet, brown meat on medium high heat. Add sliced veggies and stir fry until tender (about 5 minutes).

If so desired, lower heat to medium low and add eggs to make a scramble.

Serve cubed avocado on top of stir fry/scramble.
